Video settings on OG Xbox

how come whenever I put NO/NO/NO on all of the video settings if my CRT supports 480p/720/1080i, the game actually starts to finally display gameplay. but if i put even yes on one of those settings then all of a sudden the screen is all glitched and i can hear the game starting up as normal, but it's just the image that's all distorted. game i'm using is Nitro Kart if that info matters, and the cables are OEM component ones.
