Mounted USB drive share

Hi, I have USB disk mounted to RPi5. (mnt/usb1) But after restart root takes over as owner and I cannot change permission even if I try.

This is what I have in FSTAB: UUID=IDofDISK /mnt/usb1 exfat defaults,auto,users,rw,nofail,noatime 0 0

First time I mount this I can play around with permissions but after reboot Im not longer owner. (Root is).

Im using this folder as mount point and SMB share so I can transfer movies from Windows machine directly to server where is PLEX installed. Share is another problem where can I see the folder but cannot asd/remove anything.

SMB SETTINGS [pimylifeupshare] path = /mnt/usb1 writeable=yes browseable=yes public=yes create mask=0777 directory mask=0777
