Pi 5 8GB, GUI turns solid gray after some time running idle

I set up a Pi5 8GB as a little workstation in my office. It's in a small Lego brick enclosure and connects to a few USB things -- two hubs, camera, 3d printer, KB, mouse. It boots vanilla Raspberry Pi OS w/ GUI from an SSD connected to one of the USB3 ports. I am using the official active cooler and Pi5 power supply and don't get any power warnings.

If I power it on and then don't touch it, eventually the display just turns gray. This is whether I am logged in or not. To get the display back I can switch to another console and restart lightdm. I don't lose SSH or any other services when this happens. Nothing obvious stands out in the logs. Any idea what's going on here?
