Putting GPIO pins through a PCIE edge connector?

Hi all, I've been looking of a way to make it easier to move my Pi 4 from project to project, and I thought having an edge connector to put all the relevant signals on might be a good way of making a quick-connect system. What trouble could I run into when using the GPIO header pins?
PCIE connectors can be obtained cheaply, they have a voltage rating of 300V, adequate current rating, and characteristic impedance of 85 Ohm.
I understand stuff like Ethernet could still work even though Ethernet is a 100 Ohm impedance system while PCIE is 85 Ohms, it would just not work at 100% bandwidth I guess. Same with HDMI.
I would appreciate any tips on what might go wrong/right, I'm kind of new to laying out high speed digital tracks.
