Raspberry Pi Storage Question

Hello! I am new to raspberry Pi and I was wondering about the Micro SD.
I looked up how much raspberry pi 3 and 4 could handle and some say only 32 GB and other up to 256GB
They said you could use higher but you have to convert the exFat to Fat32 and it’s very difficult.
Is it difficult to convert? What is the best and easiest way to convert? How much can it really handle? 32 or 256gb?
