Please help me figure out why my docker wont run

I'm trying to run kiwix in a docker and have followed a combination of instructions from a few places which I compiled here so that when I finally figure it out I'll have a tutorial of sorts to help others do the same. Ask questions since I don't know what other information could be useful to help you think of a solution.
What I have so far-
Install Kiwix:
Download zim files here: https://wiki.kiwix.org/wiki/Content_in_all_languages
or FTP here: https://ftp.fau.de/kiwix/zim/

Following Instructions here: https://github.com/jonboiser/dockerized-kiwix-server
and here: https://github.com/assarbad/containerized-kiwix-server

I have Summarized:

curl -sSL https://get.docker.com | sh
​
Maybe necessary to run these commands based on output from curl command:
sudo sh -eux
